"body": "<p>The 2022 vintage was an early and warm one. A heat dome hit during Labor Day, catapulting sugars—and, therefore, harvest. While some blocks fared well through the heat, others with rocky soils and low water-holding capacity had to be picked. The benefit of being at elevation was clear in 2022. Our vineyards did not get as hot as those on the valley floor. We were able to maintain great color and tannin, although slightly lower than average, due to the intense heat in September 2022. But, Howell Mountain always offers more tannin than we need, so having a bit less tannin naturally allowed us to ferment on the skins slightly longer than normal, while still exhibiting that classic Howell Mountain structure and mouthfeel.</p>\n"

"body": "<p><strong>Fermentation</strong></p>\n<p>The fruit was handpicked, destemmed/whole berry, hand sorted or optically sorted, and pumped into small stainless steel fermentation tanks. The must was kept at 50°F for a two-day cold soak. Fermentation was hot and fast, with temperatures reaching a maximum of 92°F, and the juice macerating on the skins/seeds for 6-9 days.</p>\n<p>&nbsp;</p>\n<p><strong>Élevage</strong></p>\n<p>The wine was aged for 19 months in 82% new French oak barrels. Malolactic fermentation occurred in barrel immediately after primary fermentation was complete. The wine was racked quarterly once malolactic fermentation finished until bottling.</p>\n<p>&nbsp;</p>\n<p><strong>Cooperage</strong></p>\n<p>We use several different coopers for the Estate Howell Mountain Cabernet Sauvignon including Allary, Ana Selection, Atelier, Bel Air, Cavin, Darnajou, D’Aquitaine, Doreau, Ermitage, Mercier, Mercurey, Nadalie, Tonnellerie O, Orion, Quintessence, Saint Julien, Seguin Moreau, Sylvain, Treuil, and Vernou.</p>\n"

"body": "<p><span style=\"font-weight: 400;\">The wine has aromas of Chelan cherry, raspberry, boysenberry, cola, vanilla bean, dried violets, and graham cracker. On the palate are flavors of blackberry pie, fresh blueberry, rose petal, raspberry preserve, and a touch of caramel and baking chocolate. The wine has a beautiful balance of acidity and tannin that gives the wine length and balance. The wine finishes with a touch of chocolate-covered blueberries and silky-smooth tannins. The addition of Petit Verdot in the blend gives the core of Cabernet Sauvignon some additional structure, as well as the blue/black fruit notes in the nose. </span></p>\n"

"body": "<p><span style=\"font-weight: 400;\">The cade Napa Valley Cabernet Sauvignon is made from six of Napa’s most sought-after vineyards: Kenefick Ranch, Ballentine Vineyard, and Frediani, all in Calistoga, Hanson-Hsieh Vineyard in Oak Knoll, and, finally, Chaix and Galleron in Rutherford. We picked the fruit from these vineyards starting on September 7th and finished on October 4th. The 2022 vintage is memorable for its intense heat wave around Labor Day. If you weren’t picking during that event, then you were in trouble. Our vineyards in Rutherford and Oak Knoll fared through the heat event quite well, so what could have been a very challenging vintage turned into a rather elegant and supple wine.</span></p>\n"

In the palate are flavors of crushed blackberries, raspberry coolie, milk chocolate covered black cherries, caramel, coco powder, anise, and vanilla extract. The tannin structure in this wine is both powerful and refined. There is a length and persistence to this wine that is what makes this vintage of CADE Reserve very alluring and age worthy. The wine finishes with flavors of candied blue and black fruit, fresh plums, and espresso. This wine is a blend of the best blocks, best barrels, and overall, a wine that reflects the best of Howell Mountain.</span></p>\n"

"body": "<p><b>Fermentation</b></p>\n<p><span style=\"font-weight: 400;\">The fruit was handpicked, destemmed/whole berry, hand sorted, and pumped into small stainless steel fermentation tanks. The must was kept at 50ºF for a two-day cold soak. Fermentation was hot and fast with temperatures reaching a maximum of 92°F and the juice macerating on the skins/seeds for 5-7 days.</span></p>\n<p>&nbsp;</p>\n<p><b>Élevage</b></p>\n<p><span style=\"font-weight: 400;\">The wine was aged for 20 months in 100% new French oak barrels. Only free run wine was used in the blend, no press fractions were selected. "body": "<p><span style=\"font-weight: 400;\">The 2023 CADE Estate Sauvignon Blanc has aromas of white peach, white flowers, lemongrass, kiwi, honeydew melon, and honeysuckle. On the palate are flavors of green melon, citrus, orange blossom, lemon curd, and pear. The texture of the wine is silky, creamy, and yet vibrant. The addition of Viognier adds viscosity and a floral note to the wine that is very intriguing and complex. The wine has beautiful minerality, acidity, and texture. It was a unique vintage in Napa Valley, and, therefore, I think it is one of the best Estate Sauvignon Blanc blends we have ever made. The fruit from the Estate is some of the most intense and delicious yet perfectly balanced in chemistry and flavor. It is an honor and a privilege to work with this fruit.</span></p>\n"

"body": "<p>The 2023 Estate Sauvignon Blanc is from our Estate in Oakville. The fruit was harvested on the later side because of the cooler 2023 vintage, so we didn’t start picking until September 11th and wrapped up on September 25th. That was the latest pick of Semillon from the property on record. Despite the later pick date, the fruit was still fantastic, with naturally lower sugar, higher acidity, and amazing flavors due to that extra hang time from the below-average temperatures of 2023.</p>\n"

"body": "<p><span style=\"font-weight: 400;\">Fermentation was carried out in a combination of stainless steel tanks and drums (68%), concrete eggs (26%), and French oak barrels (6% new). We have five concrete eggs that are used exclusively for the three clones of Sauvignon Blanc (1, 6, Musqué) and the Viognier and Sémillon from the Estate. The combination of concrete, stainless steel, and barrel gives the wine a unique and complex texture. Fermentation lasted for an average of 20 days at an average temperature of 56°F, with no malolactic fermentation occurring. The wine was aged sur lie for six months and then blended together in January. After blending, it was returned to stainless steel drums for another three months of aging before bottling.</span></p>\n"

On the palate are flavors of lemon, green apple, Bartlett pear, grapefruit, honeydew melon, lemon custard, lemon grass, and passion fruit. The wine finishes with a vibrant acidity and a beautiful creamy texture. The addition of Viognier and the Sauvignon Musqué adds a lot of the honeysuckle and floral notes. The concrete eggs and the barrel ferments add a creamy texture to the wine, giving it more complexity and length while maintaining a great freshness and vibrancy.</span></p>\n"

"body": "<p><span style=\"font-weight: 400;\">In 2024, 38% of the fruit came from our newly acquired estate vineyard in Pope Valley called Oso Vineyard, 13% from PlumpJack in Oakville, and 9% from our CADE 13th Vineyard on Howell Mountain. We also worked with three other properties: Stanley Vineyard in Oak Knoll (15%), Berggruen in St. Helena (12%), and Juliana Vineyard in Pope Valley (13%). The grapes were harvested from August 12th–September 9th, 2024. The 2024 growing season was more like a typical Napa Valley growing season. Budbreak was about average, beginning in late March/early April for the Sauvignon Blanc. There was little to no frost in 2024. The summer months were warm, with temperatures reaching 100°F and very few days over 105°F. Harvest arrived at about normal, with the first pick coming from Oso Vineyard in Pope Valley and the last pick from CADE 13th Vineyard on Howell Mountain.</span></p>\n"
